ENERGY BALLS

Hey! Today I bring you the recipe of one of my favorite snacks …
They are called “energy balls” and are great for taking to the beach, before or after workout, as a snack while traveling or even for dessert …

They are super easy to make and sooo delicious!
These 3 are my favorites and they are completely different in flavor and texture.
They are a sweet snack because the base is made from dates which is a natural sweetener and very satisfying thanks to the oats and nuts.

Peanut AND Chocolate

Ingredients:

¼ cup PEANUTS

1 cup ROLLED OATS

5 pitted MEDJOOL DATES

2 tbsp CACAO POWDER

2 tbsp PEANUT BUTTER

¼ cup SHREDDED COCONUT, unsweetened

+

2 tbsp AGAVE SYRUP (for compact texture)

Preparation:

Place all ingredients into a food processor and blend in short pulses until smooth. Add the AGAVE SYRUP for compact texture. Blend for a few short pulses. Put the mix in a bowl. Roll dough out into a ball of the size you want. Place them in a trail and put them in to the freezer for 20 min or fridge a couple of hours to set. Then they will be ready to eat!

 

Ferrrero Rocher

Ingredients:

1 + 1/2 cup RAW HAZELNUTS (save the 1/2 cup extra for the end)

5 pitted MEDJOOL DATES

2 tbsp CACAO POWDER

CACAO CREAM = 1 tbsp CACAO POWDER + 1 tbsp AGAVE SYRUP

Preparation:

Put the 1 and 1/2 cup of hazelnuts in to the blender until crumble texture. Separate 1/2 of a bowl of the crumble hazelnuts until the end. Then add the rest of the ingredients to the blender, also create the cacao cream and blend all together in short pulses. Place the mix in to a bowl. Create a ball with the mix and then roll it up in to the crunchy hazelnuts. Place them in a trail and put them in to the freezer for 20 min or fridge a couple of hours to set. Then they will be ready to eat!

Crunchy blueberries

Ingredients:

1/2 cup RAW ALMONDS

5 pitted MEDJOOL DATES

1 cup ROLLED OATS

¼ cup SHREDDED COCONUT, unsweetened

1/2 cup of dried BLUEBERRIES

+

2 tbsp AGAVE SYRUP (for compact texture)

Preparation:

Place all ingredients into a food processor and blend in short pulses until smooth. Add the AGAVE SYRUP for compact texture. Blend for a few short pulses. Put the mix in a bowl. Roll dough out into a ball of the size you want. Place them in a trail and put them in to the freezer for 20 min or fridge a couple of hours to set. Then they will be ready to eat!
